Sake Bomb
On February 2, Blue Sushi Sake Grill opened in the new Preston Hollow Village at Walnut Hill and 75. The Nebraska-based restaurant, which already has a Fort Worth location, includes the Sake Bombers Lounge with a wide selection of sake and specialty martinis. The main dining area offers a large selection of classic sashimi and sushi, as well as colorfully described dishes such as the Itchy Salmon (baked salmon and spicy crab) and Truffle Snake (seared salmon and truffle ponzu). 7859 Walnut Hill Lane, Suite 100, 972.677.7887.

Health-Conscious Kebabs
Preston Hollow Village
welcomed the kebab, wrap and salad restaurant VertsKebap on January 31. The concept was first created in Austin by University of Texas alums Michael Heyne and Dominik Stein. Lean meats, rotating on traditional Middle Eastern rotisserie jacks, are sliced and served on Turkish-style flatbreads. Served with house-made sauces, most of the kebabs, wraps and salads are less than 550 calories, and ingredients are locally sourced when available. 7949 Walnut Hill Lane, 972.807.6248.

Counting Calories
Modmarket, a fast-casual restaurant, opened next door to Vertskebap on February 4. Most meals are $10 and under, and the menu satisfies virtually any diet restriction — vegan, gluten-free, paleo and low GCI. Watching calories and fat? Nutritional breakdown is printed right on the receipt. Choose from salads such as seared wild mushroom and pear, sandwiches including Thai chicken (gluten-free bread is available for all sandwiches and wraps), brick-oven pizzas, home-style plates and soups such as butternut cashew. 7949 Walnut Hill Lane, 469.532.0206.

Out of Japan
Sushi Bayashi opened February 10 in Trinity Groves — the first Japanese restaurant in the incubator concept strip. Chef and owner Yuki Hirabayashi, former sushi chef at Kenichi, is from Tokyo, and many of his dishes are unique to his neighborhood, Negishi Asakusa Ueno, such as miso ramen. 3011 Gulden Lane, Suite 106, 972.684.5906.
