Luxurious Dallas Hotel Redefines Perfection with a Stunning French Restaurant Meal

BY // 08.14.15

When it comes to the finer things in life, the Mansion on Turtle Creek in Dallas already enjoys a dizzyingly luxe reputation. However, the newest addition to the Rosewood Hotels & Resorts brand is a stunning sibling by anyone’s standards; in fact, it’s sure to move the bar several notches higher when it comes to fine dining, excellent service and the countless ineffable things that make life deliciously textured.

Hôtel de Crillon, built at the behest of Louis XV and facing Paris’s splendid Place de la Concorde, is the latest real estate bauble in Rosewood’s already luxurious portfolio. Instead of merely adding a new layer of grace and charm, the Dallas entity seems to be redefining the notion of what constitutes perfection. And spoiler alert: It’s not mere butter curls and appurtenances, although they have that territory well covered, too. What seems to be new terrain is a willingness to create a kind of narrative, a veritable train de vie. And bless them for this.

To celebrate this new alliance between Rosewood’s Dallas and Parisian properties, a “one-off” menu was prepared and served from July 17 through July 24 this summer. I was at one of the meals, and it was an evening of memorable dining.

The Hôtel de Crillon’s history includes a roster of guests that encompasses noted celebrities, politicians, artists, princes and queens. It’s said to embody the very best in life that France has to offer — and that’s a tradition they seem devoted to maintaining. Under the aegis of Rosewood, the hotel is being completely restored — the legendary Karl Lagerfeld, in fact, is designing two suites — and it’s slated to reopen in 2016.

Meanwhile, Hôtel de Crillon’s executive chef, Christopher Hache, a Michelin-starred chef, and pastry chef Jerome Chaucesse — who was named a 2015 Meilleur Ouvrier de France — developed a fabulous culinary collaboration with Mansion executive chef Bruno Davaillon and pastry chef Nicolas Blouin. The result was a dreamy multi-course dining experience exquisitely served at a relaxed Parisian pace.

Wine pairings were chosen by the Mansion’s wine director, Jennifer Eby. And it should be noted that she is as gracious as she is knowledgeable. Eby is a tremendous addition to a line-up of servers who make any other dining experience pale by comparison. And selecting highlights from the menu is impossible; it’s akin to choosing among children, pets and favorite relatives. It was all utterly exquisite — and it’s equally grand that the Rosewood offered words of wisdom that are oh-so-European:
