Top Houston Chefs Take Dinner Theater to a Whole New Level: It’s a Heated Pig Throwdown

Five chefs, five pigs, and five winemakers come together for the 10th annual Cochon 555, a U.S. food tour highlighting the marvel that is the heritage breed pig. The foodie affair comes to Houston, this Sunday, May 21 for the 10th leg of its culinary expedition, touting premier talent straight from Houston’s diverse dining scene.

Restaurant chefs Felix Florez (Ritual), Manabu Horiuchi (Kata Robata), Bobby Matos (State of Grace), Monica Pope (formerly Sparrow Cookshop), and Luis Roger (BCN Taste & Tradition) compete in a heated battle where they are tasked with utilizing nose-to-tail cooking techniques on a 200-pound heritage breed pig to prepare six innovative bites for a panel of judges.

The competition not only offers dinner theater for guests, but also advances Cochon 555’s mission to “support family farmers and educate both chefs and diners about the agricultural importance of utilizing Old World livestock.”

“Cochon 555 is the kind of food event that changes the way we look at food, and I think that’s the most important thing that we can do,” chef, food writer, and Bizarre Foods host Andrew Zimmern says.

Not only will guests have the opportunity to learn about the majestic pig through communal feasting, but winemakers Nico Cueva (Kosta Browne), Pax Mahle (Pax Wine Cellars), Abe Schoener (Scholium Project), Jeff Weinstock (Cake & Bacon), and Nate Weis (Silver Oak) will also be on hand with myriad wines.
