What: Martin Preferred Foods third annual Epicurean Project

Where: The Revaire

PC Moment: Part cooking challenge, part product sampling and part discourse on the future of food service, this tasty night was an exploration in all things culinary, well, almost all things. Twenty-one chefs including Sud Italia‘s Maurizio Ferrarese, Artisan‘s Russell Kirkham and Hotel Granduca‘s Roshni Gurnani worked their magic using Martin Preferred Foods’ specialty ingredients.

Winning the People’s Choice honors for a savory dish was The Tasting Room’s Brandi Key with her R-C Ranch Wagyu Carpaccio topped with crispy parsnips, micro arugula, truffle aioli, pickled beech  mushrooms, and porcini sea salt. Honorable mention went to Fig & Olive’s chef de cuisine Thomas Laczynsk for his elaborate rabbit cassoulet.

In the sweet category Cacao & Cardamon’s Annie Rupani took top honors for her assorted chocolates and Four Seasons’ pastry chef Emily Rosenberg, whose Tropical Cremeux-Filled Choux Puff topped with dark chocolate whipped ganache, won honorable mention.

After exploring the specialty food items on display by Martin Preferred Foods, guests gathered to tune in to the panel discussion on the restaurant of the future and the inherent challenges. PaperCity‘s Laurann Claridge moderated the panel that included Cafe Annie’s Robert Del Grande, Peli Peli co-founder/CEO Thomas Nguyen, Prime Steak Concepts’ chief brand officer Oliver Badgio, LASCO Enterprises director of culinary operations Brandi Key, and Martin Preferred Foods’ vice president of culinary Tony Contos.
