We all need a daily wine — one that we can pull from the cellar or Eurocave or closet at a moment’s notice, one that takes no effort to understand or enjoy, a wine that pairs well with grilled meats, cheeses and conversation. Here’s one for you. This 2012 vintage from Spanish producer Dominio de Eguren is aged for three months in American oak. Clay-limestone soils produce this wine, and I vouch for it, because I have been drinking it since at least 1999. Hints of spice, black pepper, blackberry and red cherries make Protocolo an easy and delicious choice. I bought a bottle recently for $8 at H-E-B.
