The Dallas Restaurant Everyone is Waiting For

Stephen Rogers and Allison Yoder, the husband and wife team behind critically-acclaimed New American eatery Gemma, are nearly ready to debut their highly-anticipated second restaurant. Sachet, a Mediterranean-inspired concept, is set to open on Wednesday, September 20 at the Shops of Highland Park.

The restaurant will focus on exotic-yet-approachable flavors drawn from a broad array of countries including (but not limited to) Spain, Greece, Turkey, Lebanon and Morocco. Think lamb, seafood, house-made pastas, salads, and a range of veggie-based starters made with seasonal ingredients.

“We’re inspired by the idea of using more vegetables,” chef/owner Rogers said in a statement. “We’ll also use a lot more olive oil, this won’t be butter and cream cooking; it will be more like what I do at home.”

Speaking of home cooking, the dishes at Sachet are meant to be enjoyed family style. The idea is that a table can order an number of things to share and sample rather than being confined to traditional appetizer and entree courses.

“It’s how we like to eat, where you order a bunch of things at once,” Rogers says.

Rogers and Yoder’s attention to detail – something that’s kept Gemma red-hot three years after opening – is already evident in their second project.

The Mugnaini wood-fired oven, for example, custom-made in Tuscany exclusively for the restaurant.

“We’ll use the residual heat from the coals to simmer our stocks overnight,” Rogers says. “In the morning, we’ll take the stocks out and use the heat trapped inside to start baking our bread for the day.”

Like its sister restaurant, Sachet will feature a thoughtful and extensive wine program. The all-Mediterranean wine list will include a unique selection of Greek, Italian, Turkish, Israeli, Lebanese and Spanish wines.

There will also be a section of the cocktail list devoted to aperitifs, Spanish-style gin and tonics, amaro and vermouth.

Sachet will be a bit larger than Gemma, with 110 seats — perhaps this will make it a little easier to snag a reservation, though that’s unlikely.
