For those wishing to center an experiential vacation on dining extravagance this summer, Oahu awaits with outstretched sandy beaches and five-star culinary escapes.

But there’s a catch. Literally.

Vacationers can now put their fishing skills to the test in pristine Oahu waters, teeming with fish, and pillage the pescatarian abundance. By way of a newly launched Four Seasons Resort Oahu at Ko Olina fishing excursion, the chartered experience is offered jointly with Mana Cruises.

This aquatic jaunt on an exclusive charter will entice the tastiest of fish swimming among Hawaiian waters, and guests can learn from the island’s most skilled fishermen. When not angling for a tasty catch, you may relax and enjoy decadence aboard the catamaran. From sun bathing to complimentary sips and bites, the crew will drench the for-the-day fishing crew in Hawaiian adventure.

Upon conclusion of the ocean outing, Oahu’s newest seafood mecca, Mina’s Fish House, will take care of the daily catch via its new line-to-table program. Adventurous vacationers can take pride in feasting on their sea-soaked catches from earlier in the day, as distinguished chefs prepare five-star dishes.

Mina’s Fish House — a restaurant concept from celebrity chef Michael Mina —  is a partnership with Four Seasons Resort Oahu at Ko Olina.

A True Oahu Escape

An oasis of luxury on Oahu’s undiscovered Leeward coast, the resort balances a classic Hawaiian style with lavishness, just 35 minutes from downtown Honolulu. Surrounded on the north by the nature preserve of Lanikuhonua, and to the south by four beach coves, this Hawaiian retreat has 370 guest rooms and suites.  With culinary indulgence serving at the forefront of guest experiences, the resort now has five on-property restaurants, including Mina’s Fish House.

“It’s an honor to partner with Chef Michael Mina — whose vision for an award-winning culinary experience centered on Hawaiian fish will be instrumental in the evolution of our restaurant offerings,” Four Seasons general manager Charlie Parker says.

Mina’s dream project pays homage to a traditional Hawaiian fish house: a fish restaurant in Hawaii where local fishermen bring fresh bounties of fish to the back door of the restaurant, ready to be served that evening.

So if vacationers do not feel like stretching their sea legs and casting a line, the restaurant’s fish sommelier can connect local fishermen to them with the daily catch and prime menu selections.

Highlights of the restaurant’s offerings include a Hawaiian seafood tower, Hawaiian Abalone Spaghetti, Butter-Basted Swordfish with Pono Pork Portuguese Sausage and Lobster Pot Pie. Avid carnivores need not fret, as Mina’s Fish House also features wood-broiled, dry-aged steaks.

“Mina’s Fish House is a true passion project of mine,” Mina says. “In a place that’s very close to my heart is incredibly exciting and we look forward to welcoming guests from around the world as our friends and family.”

An Instagram-worthy experience indeed, resort-goers will want to chronicle the beachside dining experience. Texans back home will crave the feet-in-the-sand social media narratives, as Instagram goes in tandem with zestful vacation snaps.

Rustic, island-inspired design elements anchor the space, and travelers love a photo opp with the large, custom bar and signature Tiki-inspired cocktails. Nothing says out-of-office like a beachy cocktail.

And although happy hour is ‘round the clock on vacation time, official resort happy hour happens daily from 3 to 5 pm and the bar menu features specialty cocktails such as the Run Home Jack made with Plantation Pineapple Rum, Giffard Peach, Pineapple, Papaya and Passion Fruit. And for happy hour small bites, favorites include the Smoked Local Marlin Fish Dip and Pacific Oysters.

A major player in the restaurant scene across America and internationally, Mina restaurants are featured at Four Seasons locations in Dubai, Jackson Hole, Washington, D.C. and Baltimore.

Mina is also known for San Francisco favorite International Smoke, a partnership between the celebrity chef and cookbook author and TV personality Ayesha Curry, the wife of NBA star Stephen Curry. Mina and Curry are now opening a new International Smoke in Houston.
