Preparing seafood stew is one of my favorite dishes because it reminisces the region where I was born. Here is a little background about where I was born and raised. I grew up in two areas during my childhood: in Baja California, Mexico and good old San Diego, California. Both regions are well known for their seafood signature dishes, similar weather, the Mediterranean flavors of Europe, and their wide varieties of wineries and seafood.

I genuinely love cooking and having a passion for these dynamic cultures, which have influenced my upbringing and represent my career today. With this said, in this recipe, we will introduce a Mediterranean Seafood Stew, which will combine the flavors of similar cultures I can quickly identify with – and hope to bring the same flavors to your dinner table.” – Christian Cardenas, Radio Milano

Radio Milano (IG)

Ingredients

  • 2 tsp minced garlic
  • 1/2 yellow onion, finely chopped
  • 4 plum roasted tomatoes, seeded and diced
  • 1 cup tomato puree
  • 2 tsp lemon zest
  • 1 cup clam juice
  • 1 cup fish stock
  • 1 bay leaf
  • 2 Tbsp fresh parsley, minced
  • 1/2 cup white wine
  • 1/4 lb uncooked large shrimp, peeled and deveined
  • 1/4 lb black mussels
  • 1/4 lb fresh salmon, extra large diced
  • 1 ea pita bread
  • 2 Tbsp olive oil
  • 2 Tbsp lemon juice
  • salt, to taste

Directions

  1. Sauté onion in oil until they sweat. Add 1 teaspoon of garlic and cook 1 minute longer. Add white wine, tomatoes, tomato puree, lemon zest, and bay leaf, cooking and stirring for 2 minutes. Add clam juice and fish stock to tomato puree and salt to taste. Bring to a boil. Reduce heat, cover, and simmer for 10 minutes or until heated through.
  2. In a separate pan, cook mussels and shrimp, and deglaze with white wine and lemon juice. After mussels open up and shrimp start turning pink, add mix from the first pom, then the salmon and parsley. Cover and cook for 8-10 minutes or until fish flakes easily with a fork.
  3. Grill pita bread and serve on the side.
