Salmon Tartar – The Post Oak Hotel

Ingredients

  • 6 oz fresh Alaskan or Atlantic Salmon
  • 6 oz smoked salmon
  • 1 shallot, thinly chopped
  • 1 Tbsp chopped Kalamata olives
  • 1 Tbsp chopped capers
  • 1 roma tomato, diced small (use only the outside part of tomato)
  • 2 Tbsp chopped fresh basil
  • 2 Tbsp chopped chives
  • 1 tsp fresh dill (optional)
  • 4 Tbsp extra-virgin olive oil
  • 1 lemon, juiced
  • salt and pepper, to taste
  • 4 slices sourdough bread, grilled

Directions

  1. Chop the fresh salmon and smoked salmon on a clean cutting board.
  2. Add the rest of the ingredients (except the lemon juice) into a small mixing bowl. You will add the lemon juice just before serving. The mix (sans lemon juice and seasoning) can be made ahead and refrigerated for 24 hours.
  3. Cut the sourdough or other bread of choice into slices. Sear or grill the slices until they’re hardened on the outside but still soft on the inside. You can add a bit of olive oil on the bread prior searing the bread slices to help get better color.
  4. When ready to serve, add the lemon juice and seasoning to the Tartar mix. Taste and adjust to your liking,
  5. Use a mold or spoon to divide the Tartar between the 4 grilled pieces of bread.
  6. Served with a salad.
