Ingredients

  • 1 36 oz Porterhouse steak
  • 5 tablespoons Vegetable oil
  • 4 oz Butter
  • 10 sprigs Thyme
  • 6 Garlic gloves
  • To taste Salt and pepper

Directions

  1. 30 minutes prior to cooking, take the porterhouse out of refrigerator and let it sit out at room temperature.
  2. 15 minutes prior to cooking, place cast iron skillet over low heat on stove.
  3. When ready to begin cooking, season each side of the porterhouse with salt and pepper.
  4. Add vegetable oil to the cast iron skillet and turn up the heat to medium high.
  5. Once oil starts to shimmer, place porterhouse in skillet.
  6. Sear for 5-6 minutes. Do not move the porterhouse during this time. Allow sear to build a good crust.
  7. Flip porterhouse and sear for 5-6 minutes
  8. Add butter, thyme and garlic, and baste the steak for 3-4 minutes.
  9. Remove from skillet and let rest for 5 minutes before slicing.
