Dallas’ Newest Co-Working Space is all About Chef-Driven Meals
Hatchways is a Different Type of Workspace

A new kind of co-working space is upon us. Hatchways Cafe has opened in Victory Park as phase one of the new Hatchways Workspace. Located at 2346 Victory Park Lane, the new healthy spot attempts to combine a modern work environment with chef-driven cuisine.
The brains behind Hatchways is Tristan Simon. He founded Rebees, a development firm engaged in “experiential place creation,” which also operates neighboring Billy Can Can. Chefs Keith Cedotal and Matt Ford also came on board to create the Hatchways menu.
The menu includes fresh custom Hatchways Roast coffee made by Full City Rooster. There are also pastries like gluten-free almond & dried cherry scones, seeded brown-butter blueberry muffins, sea-salt chocolate chip cookies and dark-chocolate rye brownies.
For breakfast, there is an the All-Day Egg Sandwich with layered omelet, turkey sausage and chimichurri greens. There’s also a breakfast burrito with egg, white cheddar, salsa verde, whole-wheat tortilla and chorizo mushrooms or bacon. Avocado, smoked wild salmon and nut butter are all available on toast as well.
When lunchtime rolls around, there will be vegan Summer Salad Sandwiches and pressed chicken Cubans. And salads include Rainbow Tuna Poke, Chinese Chicken Crunch and Chimichurri Steak Salad.
Hatchways Cafe also offers something called the “Bowl of Goodness,” which is a healthy mix of poached egg, braised kale, brown rice, gochujang and preserved lemon. Along with these made-to-order options, there’s also some grab-and-go salads, sandwiches and lunch boxes.
And once the Hatchways Workspace gets up and running, you’ll be able to order online and have your meal delivered to wherever you are in the building. Memberships will be available for $20 a day or monthly fees starting at $100. But anyone can come into the cafe from 7 am to 7 pm to order food.
