Have you heard tomorrow is National Cheese Lover’s Day? No? You’d feta believe it.

True, there are National Days for legitimately everything — Lumpy Rugs and Coast Guards, to name a few — but tomorrow’s is among the most universal.

If you want to celebrate, look no further. PaperCity has curated a list of some of the best, cheesiest dishes Houston has to offer. You won’t find mac ‘n cheese or cheesecake on this list. We’ve thought outside the box. Souffle and shrimp and grits await.

Go for some Asiago or Gorgonzola. This day only comes around once a year. Even if we’re not quite sure why it comes around at all.

Trust us, even if we made a cheesy joke earlier.

Cane Rosso: The Honey Bastard Pizza

The greatest cheesy delight at Cane Rosso isn’t even on the menu — but it’s anything but low-key. Chef Jay Jerrier left the tech industry behind to craft some gourmet and what we’d call “inspired” pies.

Case in point: the colorfully named The Honey Bastard. It’s not-so-secret despite being off-menu, and it’s a combo of spicy and sweet. Think mozzarella, hot soppressata, and habanero-infused honey on a mozzarella and bacon marmalade base.

Brennan’s of Houston — Shrimp & Grits

Southern hospitality is the mantra at Brennan’s, a mouthwatering Houston fixture for 45 years.

Chef Joe Cervantez’s version of Shrimp & Grits is no exception. He takes six gulf shrimp from H-Town’s J&J Shrimp Company, coats them in Creole seasoning, sears them in a hot pan, and places them on top of his favorite grits, courtesy of Homestead Gristmill in Waco.

The dish gets its cheesy element from Texas goat cheese, which is cooked down with butter, milk, and roasted corn.

Don’t forget to snag a praline on your way out.

The Original Ninfa’s On Navigation — Chili con Queso/Queso Flameado

It’s a tasty tossup at the Ninfa’s that started it all. Whether you go dippable Queso or gooey tortilla-filler Flameado, you can’t go wrong.

Ninfa’s Chili con Queso is a crowd-pleasing classic, a blend of Velveeta, pico de gallo, milk, celery and green bell pepper.

The Queso Flameado kicks things up a notch. It’s essentially Oaxacan cheese casserole that turns up the heat with eye-watering chorizo. Wrap it up and chow down.

Rise No. 2: Marshmallow soup

Soufflé has been around since the 18th century, but you’ve never seen it quite like this. Don’t believe me? We’re literally discussing “Marshmallow soup.”

Let me raise your expectations: there are no real marshmallows in sight. Three mini goat-cheese soufflés stand in for marshmallows in the carrot and tomato bisque. The savory, fluffy bites are a great accent and perfect for a chilly night.

The Cheese Bar: Grilled cheese

This American-style bistro and European-style cheese shop at the Boardwalk at Towne Lake boasts a cheese-centric cafe and a wide array of artisanal cheeses.

On this cheese lovers weekend, go for a “grown-up grilled cheese,” like the best-selling Turkey, Brie, and Apple, or maybe the Fig, Chevre, and Prosciutto.

If you’re thinking “Man, I could really go for some Manchego,” maybe take something home. Peruse dozens of high-end cheeses.
