Top Houston Restaurants Take On Beyonce’s Favorite Vegetable and Dr. Seuss

Over or not? We’re talking about kale. The vegetable began exploding in popularity in some cities several years ago, and is now on menus (and in home kitchens) everywhere. Beyonce even declared her love for the leafy green by rocking a navy sweatshirt plastered with the work “KALE” in her viral “7/11” music video.

Now, the Green Valentine project (a festival of events promoting sustainability and responsible consumerism) is bringing the beloved produce to the forefront with the 2nd annual Green Eggs and Kale chef series in Houston.

Inspired by Dr. Seuss’ classic children’s book Green Eggs and Ham, the series challenges local chefs to create dishes that embody the Green Eggs and Kale theme and highlight the city’s agriculture. Participating restaurants include Bramble, Brasil, Canopy, Canyon Creek Cafe, Cedar Creek Cafe, Cottonwood, Dry Creek, La Grange, Liberty Kitchen, Low Brow, Onion Creek The Raven Grill and Weights + Measures. A portion of all sales will be donated to Urban Harvest.
