The 10 Best Fort Worth Restaurants for Caviar
Where to Find Ossetra Tastings, Dishes Topped With Roe, Bumps, and Beyond

Fort Worth is enjoying something of a caviar renaissance — and we say bring on the roe, baby! Whether you’re doing a “bump” at a gala or indulging in caviar-topped tacos at Dos Mares, nothing launches an already enjoyable meal into orbit quite like this salty indulgence.
For some caviar expertise, we chatted with the co-founders of CATES Caviar, Kate Sahliyeh and Caitlin Faubion, about their local event company and the finer points of enjoying this delicacy. Faubion says they started CATES Caviar to share their love of caviar and socializing with others.
“Caviar is fun,” she continues. “It always gets the party started, like a fun shot or a glass of Champagne.”
Sahliyeh says the first thing to know is that true caviar is salted sturgeon roe, and different species of sturgeon produce different flavors, textures, and pearl sizes. Much like wine, finding a favorite comes down to tasting and learning what appeals to you. Golden Kaluga, for example, tends to have larger pearls and a mild, buttery flavor, while Baerii is smaller, earthier, and more briny. Ossetra offers a firmer pearl and a more complex flavor profile.

Now that we know our pearls, it’s time to indulge. From French spots to steakhouses, these are the Fort Worth restaurants putting their own delicious spin on caviar.
Paris 7th Restaurant Français
3324 West 7th Street
For those who prefer their caviar with a decidedly French twist, Paris 7th Restaurant Français offers four caviar selections from famed Parisian caviar house Maison Pétrossian. A $20 Royal Ossetra tasting comes with two blinis and ice-cold Cîroc vodka, while a full ounce with classic French accoutrements is $138. Diners can also splurge on Tsar Imperial caviar for $187 an ounce or Pétrossian Special Reserve Ossetra for $447.
The Chumley House
3230 Camp Bowie Boulevard, Suite 150
The Chumley House offers a full ounce of Golden Ossetra caviar for $99 as an add-on to its Artichoke & Caramelized Onion Dip with malt vinegar chips. We recently had an amazing time at Duro Hospitality’s first Fort Worth restaurant, finally indulging in its famous Beef Wellington and taking in the striking space that features one of the best private dining rooms in the city.

Grace
777 Main Street
Grace offers a traditional caviar service featuring Royal Ossetra with shaved egg whites and yolks, chives, house-made crème fraîche, and brioche toast points. Maine Diver Scallops are served with shallot potato cakes, creamed leeks, American Sturgeon caviar butter sauce, and crème fraîche. Butter Poached Oysters, formerly a secret-menu item, are topped with jumbo lump crab, American Sturgeon caviar, and chives.
Emilia’s
3300 Camp Bowie Boulevard
This one could make a great surprise for an anniversary or similar celebration (hint, hint). Emilia’s offers an off-menu caviar service for $180. It includes one ounce of caviar, two splits of Pommery Champagne, blue corn mini blinis, shallots, crème fraîche, capers, egg white, and egg yolk.

Café Mirador
3220 West 7th Street
Café Mirador works caviar into both its lunch and brunch menus. Deviled eggs topped with caviar and chives are $16 for four and available at both times. Only at brunch, diners can add caviar for $19 to the French Omelette with Comté and fine herbs or the Eggs Benedict with smoked salmon, dill, poached eggs, and hollandaise.
B&B Butchers & Restaurant
5212 Marathon Avenue
B&B Butchers & Restaurant is best known for its serious steak program, and its location at The Shops at Clearfork enhances that experience with a dedicated caviar service. The $160 B&B Reserve Caviar Service features Royal White Sturgeon caviar. B&B Reserve was developed after founder Benjamin Berg traveled to an Idaho sturgeon farm to take part in the caviar harvesting process.

Clay Pigeon
2731 White Settlement Road
Chef Marcus Paslay’s venerable Clay Pigeon has been a Fort Worth dining fixture since opening in 2013, with a focus on seasonal, from-scratch cooking. The Caviar Deviled Eggs are topped with both smoked trout roe and American Sturgeon caviar, finished with chives. The $18 starter brings a touch of luxury that pairs perfectly with a glass of sparkling or crisp white wine.
Wicked Butcher
512 Main Street
Wicked Butcher takes a classic approach with Gold Ossetra Sturgeon caviar from Regalis Foods, served with crème fraîche, warm blinis, finely chopped egg, red onion, and fresh chives. For an even bigger indulgence, diners can pair the caviar with the steakhouse’s Hokkaido A5 Wagyu and a glass of Champagne.

Bowie House
3700 Camp Bowie Boulevard
Bowie House’s signature Cowboy Caviar Service features Pétrossian caviar with citrus cream cheese, red onion jam, Bricks and Horses’ famous country biscuits, and house fixings. The distinctly Texas take on traditional caviar service is also a personal favorite of CATES Caviar co-founders Kate Sahliyeh and Caitlin Faubion.
Stewart’s Croquet & Cocktails
4424 White Settlement Road
Stewart’s Croquet & Cocktails puts caviar top and center on the menu. Its Silver Tin pairs Royal Ossetra with six chilled shots of Absolut Elyx, while the Gold Tin pairs roe with six chilled shots of Beluga Gold Line. Caviar bumps are available individually, and the Fried Cheese tops potato-crusted Brie with Ossetra caviar and caramelized onion.
