Two Las Vegas Sushi Masters Open a New Restaurant in Deep Ellum: Say Hello to Chef Boom Boom — and a Crazy Amount of Rolls

Two Las Vegas sushi chefs are taking a deep dive into Dallas’ hip Deep Ellum neighborhood. Their new restaurant’s all about traditional-meets-tapas Japanese dishes with an impressive cocktail bar. Hibiki, here we come.

Chefs Franky Shin and JB Kim bonded over their love of sushi at the aptly named I Love Sushi in Las Vegas. Shin must have learned a thing or two about betting, because he won big with his own restaurant, Sushi Lover in Plano.

Kim moved here last year, and the pair are now partnering up on Hibiki at 2651 Commerce, in the space formerly occupied by the shuttered Amsterdam Falafelhouse, next door to the also-closed Parlor Bar. They opened the sleek space — think dark wood and a sushi bar to the right —just last week.

The pair ditched the Vegas razzle dazzle in favor of traditional teriyakis, soups, udon noodle dishes, lunchtime bento boxes, tempura and tons and tons of rolls in Dallas.

Plano’s Sushi Lover fans were the first to suggest a Dallas restaurant. Then, it was no trouble narrowing it down. The two chefs didn’t feel like it was a big gamble. The duo was drawn to the trendy, growing area of Deep Ellum.

“They found a great place here in Deep Ellum. The neighborhood is getting busier and busier. Recently, in the last two or three years, many restaurants have opened,” Hibiki spokesperson Vicky Kim tells PaperCity.

“But there’s only one Japanese restaurant, and no traditional Japanese food.”

The mission is simple: show Dallasites the sushi they’ve been missing.

“More people want to know more about Japanese food. California and Las Vegas has more high quality sushi compared to Texas. The chefs wanted to introduce what they’ve been working on,” Kim says.

Their crowning achievement would be the sushi rolls menu. Hibiki offers between 70 and 80 types of rolls. But the list started out even bigger.

“We had about 100 different recipes. One hundred is so many. We had a really hard time choosing. The rolls are definitely a really popular item,” Kim laughs. “I don’t see other restaurants in Dallas with this many choices of sushi roll.”

An Entertaining Chef

While Hibiki not an izakaya-style Japanese pub, the new restaurant does bring tapas to the table. And a serious bar program. Think Japanese whiskey and Soju, classic cocktails and, of course, the best in sake.

You could say it’s interactive. With a chef — who goes by the moniker Chef Boom Boom, Kim says — willing and eager to show patrons just how a sake bomb is done.

“It’s the food quality and the sushi chef. He’s a really funny guy. He can amuse the customers. He doesn’t only make sushi, he entertains people,” Kim notes.

And he’ll do it late into the night on weekends. Hibiki is open until 1 am on Fridays and Saturdays. Mondays through Thursdays, you can find a happy hour from 5 to 7 with drink specials and special sushi rolls.
