A bevy of brisket lovers will brave the cold Saturday morning to take on hearty plates of Truth BBQ. The day is here. The beloved Brenham smokehouse is finally opening up its much anticipated new Houston barbecue mecca at 110 South Heights Boulevard.
After multiple months-long delays that stretched the wait to nearly two years, you’d better believe the line will start to form way ahead of Truth’s scheduled 11 am opening, no matter how cold it is by Houston standards.
Carnivores crazy for the savory Hill Country spot will have the chance to munch on the succulent meats — which earned a Top 10 ranking in Texas Monthly’s vaunted Top 50 Barbecue Joints list— until it’s all sold out.
Space City’s own pitmaster Leonard Botello IV is known for his Central Texas-style barbecue, and a menu heaped high with 18-hour smoked brisket, spare ribs, house-made sausage and pulled-to-order Duroc pork. Botello told Texas Monthly he counts Austin legend Aaron Franklin and John Lewis among his major influences.
Botello is opening his new Truth in the former J. Black restaurant space, teaming up with well known Houston restaurant tycoon Johnny Carrabba and private wealth manager Jason Fertitta. For more on how this unexpected partnership first came together, read Shelby Hodge’s PaperCity exclusive.
When it comes to Truth’s sides, it’s all about the daring — tatertot casserole and corn pudding, for starters. Plus, you’ll find desserts like the signature triple chocolate, red velvet and banana-caramel layer cakes, inspired by the pitmaster’s mother’s recipes.
You don’t need to look far to find a rabid Truth BBQ fan, and the five stars on Yelp are quite the tasty testament.
Botello’s Brenham joint, which garnered almost immediate acclaim upon its 2015 opening, is temporarily closed in preparation of The Bayou City barbecue takeover. It’s set to reopen tomorrow.
