Top Chef Leaves The Joule to Open Ultra-Ambitious New Dallas Restaurant

Plenty of Mystery Surrounds Project, Team Up With Restaurant Tycoon

Exciting news for Dallas foodies: Two of the city’s favorite culinary powers are teaming up to open one major new restaurant. Junior Borges, The Joule Hotel’s executive chef, has revealed that he is opening a new concept in partnership with Stephan Courseau, owner of Le Bilboquet and Up On Knox.

The upcoming restaurant will be in the same Knox area as Courseau’s aforementioned hotspots. The name and exact location have yet to be revealed.

“Stephan and I share the same vision and want to create a restaurant that is refined, yet at the same time approachable, and continues to push Dallas further into the national restaurant scene” Borges says in a statement.

The new project will mark the end of Borges’ tenure with Headington Companies, where he served as executive chef of The Joule, overseeing culinary direction for Americano, CBD Provisions, Mirador, Weekend Coffee, Midnight Rambler, and The Lobby Bar, as well as managing onsite and offsite catering, and in-room dining. Prior to joining Headington, Borges moved to Dallas from New York to open critically-acclaimed Uchi as Chef de Cuisine.  

“I met Chef Junior Borges after his tenure at Uchi; we became fast friends and started contemplating the possibility of a great partnership instantly,” Courseau says in a statement. “When I signed the lease for Up On Knox, I offered him to be my partner, but he had already committed to Headington Companies.

“However, I always hoped it was only a matter of time before we could achieve our goal to work together. I am thrilled that he decided to come in to a new structure, where he will by my partner for new concepts and be the head of all kitchen operations including Le Bilboquet and Up On Knox.
