Soufflé Tasting Party Lets Influencers Dig In and Choose Houston’s Next Favorite

Elizabeth Swift Copeland, founder of The Fab Fête soufflé, was intrigued when I shared with her that my friend, Sharon Adams, was serving the original cheese soufflé with quality caviar and that it was amazing. The thought had not yet occurred to the catering and special events wiz. She was at the moment focusing on developing new flavors for her wildly popular soufflé business.

In fact, our conversation took place in her Swift + Company headquarters where she was hosting a soufflé tasting for influencers of a sort to sample three new offerings and vote on their preference. The winner would be included in her winter offerings.

Our appetites were whetted for the new flavors by first savoring the originals — Signature Cheese, White Corn and Truffle and the Brio Trio – and Viva!, the seasonal flavor for summer. For those unfamiliar with The Fab Fête, the soufflés are pre-filled in a handsome soufflé dish, frozen, beautifully packaged, and available for shipping across the country or across town. They are also available for local pickup.

I’ve had them and the soufflés are delish.

For the friendly competition, the center table was beautifully set — as would be expected — with floras and a picturesque assortment of fruits, nuts and breads.

Candidates for the winter flavor were Fontina, Butternut squash, Onion; Cheddar, Apple, Thyme and Gouda; and Spinach, Roasted Peppers. Guests’ votes were tabulated and the winning flavor was the Fontina, Butternut Squash, Onion. The winter soufflé will be available beginning on October 25.

The occasion also served to introduce several signature cocktails that the Swift team had created to accompany the soufflés. On arrival, guests were greeted by waiters offering several intriguing drinks: The Fab Fêter made with pomegranate juice, toffee syrup, vodka, lemon juice and garnished with a lemon wheel; the Ginger Tea Julep, tea punch with Bulleit Bourbon and ginger beer garnished with sage; and the Paloma on the Range made with grapefruit juice, lime juice, Cuervo Gold, agave syrup and garnished with rosemary; as well as Rosé Sangria; French 75; and Minted Tea Punch.

Now back to the caviar thing. Swift allowed that she might just included that as an option in her catering business. And we think that is a very good idea. Soufflés can be ordered here.
