At a dinner party this past weekend, where seven courses were paired with great wines from the hosts’ 1,600-bottle cellar, we were treated to an excellent salmon tartare — a dish inspired by Thomas Keller’s salmon cornets. It was the second course, and with it we drank Château de Montfort Vouvray, demi-sec. This wine’s upfront subtle sweetness transitions to wonderful acidity and minerality. The grape, is, of course, chenin blanc, an often underappreciated one (at least on these shores).
