At a dinner party this past weekend, where seven courses were paired with great wines from the hosts’ 1,600-bottle cellar, we were treated to an excellent salmon tartare — a dish inspired by Thomas Keller’s salmon cornets. It was the second course, and with it we drank Château de Montfort Vouvray, demi-sec. This wine’s upfront subtle sweetness transitions to wonderful acidity and minerality. The grape, is, of course, chenin blanc, an often underappreciated one (at least on these shores). And, you’re in luck, because Houston Wine Merchant sells this jewel of the Loire Valley’s Touraine Region for only $18.
