Dallas’ Mansion Restaurant Brings in a Star Mexican Chef
A Taste of Puebla Awaits
By Natalie Gempel //
Have you been lucky enough to visit Puebla, Mexico? Located a couple hours southeast of Mexico City, the colorful town is a treasure trove of colonial architecture, beautiful churches, and delicious, distinct cuisine
However, if you’re unable to make it south of the border, you’re in luck: A taste of Puebla is coming to you.
This week, Jorge González, executive chef at the Rosewood Puebla hotel, is bringing a special culinary pop-up experience to the Rosewood Mansion on Turtle Creek.
From Tuesday, March 6 to Saturday, March 10, the renowned Mansion Restaurant will offer a Puebla-inspired menu in addition to its standard fare. Even the restaurant’s famous tortilla soup is getting the Puebla treatment.
Other features include a trio of molcajete sauces with tortilla chips (molcajete is the Mexican version of the mortar and pestle, so think guacamole and salsas); the molote sampler (molote is a corn-based pastry with various savory fillings); the catch of the day, roasted with pumpkin seeds; mole poblano kurobuta pork chops; banana and Mexican style chocolate tart; and tres leches cake.
González, who is trained in traditional Mexican cuisine, updates indigenous Pueblan dishes with French, Spanish and Lebanese flavors and techniques, taking you on a culinary adventure you won’t want to miss.
